Side Sales


We are adding side sales to the Full Farm CSA! By placing an order and paying the deposit you will be set up for delivery of your order in January 2026. 


Side sales involve purchasing a quarter or half of an entire animal. That animal is still living when you place the order and will be harvested on the farm on January 17, 2026. You get to request the cuts of meat and you store the whole purchase in your freezer.


Reservations required:

Reservations for sides are secured by a non-refundable deposit of $200, with the exception of half beef orders, which require a $400 deposit. Deposits are taken through our CSA store. These deposits will be applied to the final price when making your final payment. 

  • Final price established after slaughter date

  • Cut and wrap fees are included in the price

  • Customers designate how the product will be portioned

  • Invoice is sent to customer and product released upon full payment


Cost per pound:

Beef - $10 per pound of hanging weight

Pork - $8.50 per pound of hanging weight


Deposit prices:

Half Beef $400

Quarter Beef $200

Half pork $200 


Why purchase your meat by the side?

Purchasing sides is the least expensive, most environmentally sound, and most humane way of purchasing meat. The animal is allowed to spend its entire life on the farm without being shipped to a slaughterhouse. Animals are sacrificed in a gentle and humane manner on the farm by local ODA-certified butchers. The cost for processing in this manner is significantly less, and we pass that savings on to you. 


When can I order meat this way?

You can place your order after December 1st by going into our CSA store and purchasing a deposit. Then, when the annual date comes around, we go to work on your order. For 2025-2026 that is January 17, 2026


Estimated Final Price and Processed Weight:

$4250 for a whole beef which results in around 385 pounds of meat, plus bones and organs.

$1260 for a whole pork which results in around 125 pounds of meat, plus bones and organs.


How much product will I actually receive?

Since you are purchasing a live animal, it is difficult to give an exact amount until the animal is sacrificed. The actual weight of the product you receive (processed weight) will be approximately 70% of the hanging weight. Hanging weight (which the butcher will provide to the farm) is the weight of a carcass after slaughter and removal of organs, head, and hide. The processed weight is less because it accounts for the removal of bones, fat, and water lost during the dry-aging process. 


The take-home weight is also influenced by the choices of cuts you choose. Will you want bone-in or boneless roasts? Will you choose bone-in rib steaks or boneless ribeyes? Porterhouse and T-bone steaks have the bones, but they become Kansas City strip steaks and filet mignon without them. These decisions affect that total. You are also purchasing the fat and bones, and you should request those, or not, from the butcher’s cut sheet. 


How do I store the product?

The meat will be given to you frozen and it should be stored in the freezer. To estimate freezer space, plan on one paper grocery bag per 30lbs of product. 


What to expect when ordering by the side:

  1. First, purchase a "Side Deposit" in Full Farm CSA. Available to Guests, CSA Members and Herdshare members. This reserves the animal for the January 2026 butcher date.

  2. Deck Family Farm continues to raise the animal to finishing weight.

  3. We will contact the customer the day after the processing with a final invoice based on the hanging weight. Invoice will be due at that time.

  4. The customer will be given access to the

    to request how the meat should be portioned (ground, steaks, roasts, etc.)

  5. When final customer payment is received, 4-Star can release the order to the customer.
