Coconut-Lime Pork Tacos with Black Beans and Avocado

These coconut lime pork tacos are easy, fast, and simple, yet feel like a big step up from regular taco night. The creaminess of the coconut-pork and avocado are complimented by the bright lime juice and salty cotija, making for the perfect bite. Both flour and corn tortillas work great, and feel free to garnish with additional toppings.
Ingredients:
1 lb ground pork
1 small onion, chopped
1 garlic clove
Salt and pepper to taste
1.5 tsp cumin
1.5 tsp chili powder
1 tsp smoked paprika
½ cup coconut milk
1.5 tbsp lime juice
Pinch of sugar
15oz can of black beans
Corn or flour tortillas
Garnish:
Cilantro
Avocado
Cotija cheese (can be substituted with feta)
Saute onion and garlic until softened, then add cumin, chili powder, smoked paprika. Cook for 1 minute.
Add ground pork, cook until browned, season with salt and pepper to taste. Remove excess fat.
Add coconut milk and simmer for 5 minutes or until thickened, then add black beans, lime juice, and a pinch of sugar to taste.
Serve on warmed corn or flour tortillas with avocado, cilantro, and cotija cheese.
