We were visited this summer by food influencer Brad Leone (@brad_leone) who made a fun and informative video highlighting Deck Family Farm and it's role in creating Olympia Provision's excellent charcuterie products.

Spending time with Elias Cairo, co-owner and lead salumist at Olympia Provisions, is very enjoyable as you will see in the video. Like so many of the people we count as colleagues in the local and sustainable food industry, he is passionate and cheerful about what he does.

The video was sponsored by Decked tools - no relation to John Deck! - and John was happy to receive a cool toolbox with his name (ish) on it. Check out Decked on Instagram at @deckedusa.

If you aren't aware, we provide a significant amount of our pork to Olympia Provisions in Portland. They create some of the best American-made charcuterie (what we call cured meats in our country, even though the technique of curing may not be used) in the country. We are proud to be among a small group of farms they source their pork from.

We are also happy they create a few products for us to sell such under the Deck Family Farm label: Saucisson D'Arles Salami as well as our Uncured Pork Frankfurters. We also carry their Rosette d'Oregon salami and their OP dog treats in the CSA. Currently, we have frankfurters and dog treats available to purchase.
