Delicious Pancakes with Fresh Fruit

What does it say about me that I am craving pancakes? You'd think that would be a winter craving to comfort a person through the cold mornings. But here it is, 85 degrees (perfect weather, in my book) and I can't stop thinking about making and eating pancakes.


If you're also now picturing biting into that sweet, comfort-food breakfast, here's a nice recipe using flours from Lonesome Whistle's pancake mixes: Rise & Shine Buckwheat Pancake Mix (Gluten Free) or Up & At 'Em Pancake Mix. Add some farm fresh butter and fresh fruit, Deck Family Farm bacon and your favorite morning beverage!


Also if you're like me, you'll want to add some protein. A side of fried eggs, some farm-made English Breakfast Bangers or a couple scoops of your favorite protein or collagen powder in the mix will keep you satisfied for the whole morning.


Rise & Shine Pancake Recipe:

  1. Measure & Mix well

1 ½ Cups of Pancake Mix, heaping

2-3 Tablespoons of Sugar (optional)

 

  1. Mix in a Separate bowl

1 ¼ Cups Milk or Milk Substitute

2 TBSP Lemon juice or White Vinegar

4 TBSP unsalted butter, melted

1 Large egg

1 teaspoon vanilla, or other flavor extract (optional)

 

  1. Mix together!

Make a well in dry ingredients and slowly mix wet ingredients in with fork until you see no clumps.

 

  1. Heat!

Warm a skillet over medium heat, then add butter or oil to pan and spread around pan.

 

  1. Cook

Once the skillet is heated (but not smoking!), measure about ¼- ½ cup portions of batter and pour onto skillet. Cook until the edges look dry and you start seeing some air holes in your pancake. Then, flip and cook a few minutes longer.

*note that the pan often gets hotter as you cook, so the pancakes may cook faster after the first few. It can help to turn the pan off and cool it once or twice to prevent burning.

 

  1. Warm

If you’re cooking pancakes for a crowd, you can keep them warm in an oven set at the lowest temperature or a warming drawer while you finish cooking them.
